Abstract


Sensory analysis discriminates objective assessments (the intensity of parameters corresponding to an accurate stimulus, i.e. bitter or fruity) from assessments referred to hedonic pleasure. Sensory analysis allows identifying parameters that play a key role in consumers’ satisfaction.
